A watched roll never toasts…

And yet if you leave said roll to do its business in private you come back to find it burnt. But at least I have pictures for you today!

Today I stirred my cinnamon into my oatmeal instead of just sprinkling it on top and boy what a difference it made! I got the perfect amount of cinnamon in every bite.

  • 2/3 cup water
  • 1/3 cup oats
  • 1/2 banana
  • a drop of vanilla
  • 1 tbl cinnamon?
  • palmful of granola
  • however many loose raisins I could shake out of the bag
  • a little over a tbl of peanut butter


I actually have flax that I’d love to mix in with this as well but the coffee grinder constantly has coffee grounds in it these days and I’ve been taking a fish oil supplement for my omega-3s anyway. It can wait in the freezer a little bit longer.

I’ve been using Smucker’s natural honey peanut butter lately and it has dried out and is always hard from the fridge unlike any other natural style nut butter that I’ve tried. I also can’t taste the honey at all.

I’ve been mildly hungry all day and I’m not really sure why, but I went with it. I had a clementine when I first started getting hungry at about 9. At about 10 I had about half of my almond/shredded wheat’n’bran mix (that’s a two ounce container)


We bought roasted unsalted almonds from the bulk bins at Earthfare the other day and it’s taking me a little while to get used to them. I loved my salty Blue Diamond nuts! that’s what she said

Lunch was the usual…


coated in Ken’s lite raspberry walnut dressing, courtesy of a coworker. I liked the pomegranate flavor I had, but the raspberry walnut is much less syrup like and I think I like that better.

Afternoon… I had another clementine and the rest of my nuts and cereal. I was hungry again by the time I left work but skipped another snack and headed straight out on a run. It’s been in the low 40s most of the day, but with winds at 13 mph the “feels like” (is that the wind chill?) hasn’t gotten above 37. My bedroom was nice and warm from the afternoon sun and I finally pulled out the nice fluffy comforter last night for the bed… Boy was it hard to convince myself to ignore it, I seriously considered just crawling into bed with my book instead changing and heading back out into the elements. Oh goodness that run was painful, but I picked up the pace a bit and averaged about 10:40s for my three miles. I knew I’d regret not going more, to quote one of my very favorite bloggers, “pain is temporary,  quitting is forever!” I could be uncomfortable for 45 minutes or so, or beat myself up for skipping it for a couple of days. I still hope not to have to repeat that any time soon though… wind, wind, go away….

Showered upon my return to thaw out! Brrr. Love my running tights but even with them my thighs were cold! I went from starting out feeling like I over dressed to finishing completely comfortable. Guess that’s good.

Dinner was random. I didn’t want to wait for rice to cook and didn’t want to interrupt Hub’s studying this morning to call and ask him to rinse, sort, and soak beans for me (no forethought, I’m telling you) so I ended up with a two egg fluff with nutritional yeast covered in salsa and corn chips.


I’ve been thinking about a bag of frozen peas in the freezer for a few days, so I decided to finally indulge tonight (I seem to have an unhealthy obsession with peas), doused in Mrs Dash tomato basil garlic seasoning. LOVE this combination, even if I end up smelling of garlic all night


I also had yet another HFCS laden Kroger buttermilk roll. Since I burnt the first and wasted it I told myself I couldn’t have another but the smell of a nice toasty roll was lingering in the kitchen and I knew I wouldn’t be able to stop thinking about it, so I toasted another one and kept a close eye out. I consider it my dessert. It actually happens a lot (more when I lived with my parents and bread was served more often with a meal) that I have bread instead of a sweet dessert. I do love it so.


Tomorrow night we’re having a couple’s Christmas tree event and then Hubs wants to go downtown with a friend to celebrate her being done with finals but hopefully Saturday I can get some cross training in either with a bike ride or a class at the gym, depending on the weather. I’ve definitely noticed a bit of weight gain that has become rather inconvenient since most of my sweaters are pretty form fitting. It’s more motivation that my bank account has been to get me back to the gym. Adding in strength training will help with weight loss and also, if done correctly, greatly help reduce my risk of injury from my running! It’s a win-win. Too bad I run on the only days that there are evening pilates classes. I’ll just have to find something new to try!

As tempting as it may be, I can’t blame the weight gain on hormone changes because I took most of a month off of exercise before the change was even made. I can blame my skin issues on it though. I was lucky in puberty and never really had an acne problem but I’ve definitely had more zits than ever in the past few weeks and I’m getting rather sick of them. Next time I go grocery shopping I’ll have to buys some creme to see if that helps. I’ll also ask the doc at my follow up in a week and a half if I can expect it to go away as my body continues to adjust. The bumps don’t even bother me all that much, I just wish it didn’t have to be painful!

Fluffy oats!

Wow, I’ve been really bad about this whole picture taking thing over the past two days. I only have two pictures from tonight, and they don’t even cover all of my dinner!

I had the usual banana oatmeal for breakfast this morning with cinnamon, granola, raisins and a dab of peanut butter on top. I tried Kath’s technique of heating everything together (instead of bringing the liquid to a boil first) and they were so much smoother and creamier! I think I’ve found a new way to make oats and it even gives me time to put my lunch together while I wait! Plus this big bowl held me over all the way until lunch (I was hungry so I used 1/2 cup of oats instead of 1/3)

Well lunch was a spinach salad with goat cheese and craisins plus the last of my pomegranate dressing as well as some asiago Kashis which are pretty good, but the flavor is very subtle.

I had a clementine as a mid-afternoon snack and 10 or so almonds with a few shredded wheat and bran pieces before going on a walk with Gypsy. I had myself all geared up to go to a Group Centergy class at the gym tonight but the weather was so beautiful and mild (mid 60s and sunny) that I couldn’t bear to be cooped up and miss it. Plus Gypsy been getting really excited to go out lately so she deserved a longer walk. We walked probably a total of three miles and after her kibble she went upstairs to pass out. One requirement for our next apartment is easy access to sidewalks, for her sake and mine!

Dinner happened in multiple parts. First was chips and salsa: this 1/4 cup measuring cup was originally overflowing


Next came a Gardenburger California burger that I forgot to take a picture of

Third was the last of the roasted vegetables (red potatoes, zucchini and asparagus)


And dessert is a Tootsie pop.

As always I want nothing more than to lie down and read my current Outlander book until I can no longer keep my eyes open but I’m a tad stinky so I think I’ll do tomorrow’s library visitors a favor and take a shower first. I promise to try to remember to take pictures tomorrow! It’s just not the first thing on my mind at 6:00 in the morning!

Hey, it’s December! And the weather finally decided to man up and join in the season. Our front steps were iced over this morning! Thankfully my tush didn’t find out firsthand.

I bet you guys can’t guess what I had for breakfast! I’ve lowered my serving from 1/2 cup dry oats of 1/3 cup since I toss so much stuff on top, so after cooking 1/3 cup of oats in 3/4 cup of water I stirred in half a banana and topped it with about a table spoon of peanut butter, granola, and golden raisins.


I was hungry today, I blame it on the slightly longer run yesterday. I indulged my tummy and had roasted almonds and Post Shredded Wheat’n’Bran which according to NuVal is one of the healthier cereals you can eat!


Sometime today I made my own Gmail theme… Christmas colors! It makes me very happy so I just had to share! Nevermind the sexy Dr Cullen to the left of the browser there, he’s just keeping my company 🙂 (thinking of which, all Twilight fans (or even anti-Twilighters), please read Twilight in 15 minutes and New Moon in 15 minutes) I also get to preview Google Wave… I may or may not have an extra invitation lying around in case anybody else wants a preview… It’s kind of unimpressive so far since no one is on it. It would be soooo awesome for group school projects!

Lunch was very similar to yesterdays, spinach salad with a hard boiled egg and pear, I remembered Craisins today!


After running a few errands I got home hungry again! I set my beans to simmering for a couple of hours and had a pumpkin muffin to hold me over.


Followed by chips and salsa.


Okay, let me just say that I’ve never used dry beans before but I bought a bag of 16 types of beans from Kroger (intended to be 16 bean soup)… the instructions say to bring to boiling and then simmer for 1.5-2 hours. Nothing about adding water back in throughout the simmering process… So my beans were mush and the bottom a bit burnt. I simmered them in water with a bit of vegetable broth so they were very tasty, just not very pretty to look at. I mixed some in with leftover brown rice and some frozen veggies.


I sprinkled on some of this Cajun seasoning and am very disappointed to find that it includes salt (first ingredient in fact). That’s what makes Mrs Dash so awesome, all the flavor, none of the salt.


It was tasty, even if it wasn’t very appealing to look at! And even leaving the burnt bits in the pot (to soak) I still have a ton of cooked beans to eat over the next few days.


And now a few off the subject comments:

My grandfather pointed this article in this week’s TIME out to me about abused pit bulls. Our dogs were never fighting dogs, but Rose was definitely neglected and Gypsy looks exactly like one of the dogs in the slideshow, Winston (also the name of my last high school boyfriend)… there’s another shot of him, including his face, if you watch the video. They’re cousins, identical cousins…

And you’ve seriously got to watch the Muppet’s Bohemian Rhapsody. Terry showed it to me Saturday night and it was sent out on the library listserv this morning. Awesome!

My daddy’s in China on business and had the “privilege” of pigeon for dinner last night… I’m not sure I particularly envy him at the moment 🙂

I’m inadvertently joining Caitlin in her Responsible Spending Month… and reacquainting myself with Mint.com. I spent $250 on food last month, not including all of the groceries Hubs bought. I’m going to see how much I can lower that number this month. Even including the Christmas gift baking I’ll be doing.

A story of meals

For breakfast there was oatmeal, attempted in the microwave, topped with pumpkin, cinnamon, brown sugar, vanilla, granola, and some homemade raspberry lemon muffin. The microwave won’t be used again.


Snack attacks were calmed by trail mix and a tangerine while lunch was spinach and a leftover chicken tender, a delightful combination.


Pilates was mission accomplished and there are hopes for soreness tomorrow.

Most of the recipes I’ve seen for kale chips involve baking them at 350* for 20 minutes or so. Mine were cooked at 350 for 12 minutes and still were disappointing. I might try again tomorrow or I might just make the massaged salad again.


I believe that talking to my coworkers about Rose yesterday and talking about how it was the kinder thing to do (for all involved) actually managed to convince me at the same time. I didn’t cry last night and I don’t feel nearly as sad today. I even looked at the humane society’s website just for fun. We won’t be ready for a new dog for awhile and agree that we want a puppy, which means waiting until we have the time or space for training. A kitchen we can block off until house trained and time to watch the pup and Gypsy together to make sure Gypsy doesn’t play too rough.

I do however know what kind of dog I want when the time comes (Jack Russell) and have since Meghann got her Maddy. And I already know what name I want to propose when the time comes (Katydid, Kady for short). I want a puppy so that I can train her to be as much as a cuddle-bug as Rose was, something that Gypsy is lacking.

At the same time I know I’m going to be on a bit of an emotional roller coaster for the next while thanks to the change of hormones, so I’m not putting much stock in the fact that I suddenly feel the grieving is over. There’s still a huge hole in my life and I can’t say how lonely I feel without her here.

Well the sadness isn’t as gone as I though. I’m going to say goodnight now and go seek the company of my husband and his dog.


I finally bought some old fashioned oats at the store yesterday. I had half a can of pumpkin leftover from the waffles so I had planned breakfast before I even went to bed. I followed the directions on the back of the oatmeal subbing soy milk for half the water. I added maybe a quarter cup of pumpkin pie mix, cinnamon, ground ginger, cloves, and maybe two table spoons of brown sugar. It was good! The consistency of the oatmeal will take some getting used to, but it was better than that of quick cook oats. I’m predicting a repeat tomorrow morning 🙂


I had half a cupcake this morning. I was hoping to get a good picture of the ganache in the middle, but it looks like I didn’t pick a very good one. Still tasty, even without the sugar in the cakes!


Lunch (at 3:00) was a leftover turkey-spinach burger and a few bites of the last twice baked potato. I also had the other half of the cupcake I started earlier in the day.


I had to make room in the fridge when we got home from the store this evening so I finished off a jar of unsweetened applesauce


And dinner has been small because I’m still pretty full from lunch. I found this cereal in a discount cart at Kroger and might go back to buy more because its pretty good. Gets soggy very quickly though. I’d never buy it at the full price of $5, there are only 4 servings in a box!


I had the cereal in soy milk. I like that this is organic, but it is very vanilla-y. It was cheaper than Silk.



Hubs and I both wanted to buy popcorn at the store. I couldn’t find a natural option of mini bags and he wanted to buy his own, so we just bought kernals so that we could each modify our own. We of course had to test it out:
